If you don’t like your food “looking” at you, then this recipe might not be a favorite. But for anyone that finds arranging vegetables into various scenes or creatures amusing, then we present you with this: a tray of delicious vegetables in the shape of a fish!
Not only is this dish colorful, it’s chock full of vegetables that most kids will at least tolerate, if not like: cucumbers, red peppers, carrots, and zucchinis (or tiny pickling cucumbers) make up the bulk of this amazing arrangement, with a few spinach leaves and parsley sprigs for garnish. If you have a mandoline, use it to create the uniform, even slices used for the scales. You can do this with a knife, but patience will certainly come into play. Serve it all alongside a boat of your favorite vegetable dip, and voila!
