Perhaps one of the hardest parts of getting kids to eat healthy is getting then engaged with and excited about their food. And when you throw Halloween into the mix, the crazy amounts of candy available and waiting can bring distraction levels through the roof.

This recipe not only rectifies that situation, but also gives your kid a protein-rich start to a sugar-laden night. For this open-faced meatball sandwich, leftover meatballs and marinara sauce are ideal; however, you can quickly mix ground beef, Italian bread crumbs, egg, and a bit of oil together before baking them off to make meatballs on the fly. For a fresh, quick marinara that doesn’t come out of a jar, roast tomatoes, blend them until smooth, and then season it with basil and oregano. Let your kids have fun creating as many crazy faces as they can think of with the vegetables, and enjoy!
