This incredibly healthy (and not to mention tasty) lunch is brought to you by a classic nursery rhyme: Humpty Dumpty. The egg that dare sit on a wall, and subsequently fell, is the premise for one well-rounded lunch platter that will have kids not only eating healthy proteins, but also gobs of vegetables!
For this lunch, use one of the hard boiled eggs that you keep in the fridge (this makes putting together healthy lunches on the fly easier, especially when you’re making fun foods). Cook off the hot dog (boil, microwave, or pan fry) and arrange the plate per the recipe. This is a fantastic way to use up bits and pieces of vegetables in your fridge, although you can also cook everything fresh, and you can rework the recipe to match up with the individual kid’s specific likes and dislikes.
