Sometimes, in a world of convenient, high-salt foods and in-your-face-flavors, we tend to forget just how good a quality piece of bread actually is.

This recipe starts with just that: a good, crusty loaf with a soft, light interior, which you can make at home or buy from your favorite bakery. Slice it into even pieces, reserving the heels, and then arrange the slices accordion-style on a bed of lettuce. Create eyes for the smallest piece out of nori and smoked gouda, creating a head,  use a strawberry as the nose. Top it off by arranging the heel pieces as the wings. Scatter a few of your  favorite pieces of fruit around it, and you have a classic and simple bread, cheese, and fruit lunch.
