Desserts, especially cakes, can be heavy, and while that’s alright once in a while, sometimes you just want something sweet yet refreshing. This recipe is just that: light yet impressive and sweet but not overly-sugary, it’s perfect for Spring and Summer, and especially for Fourth of July gatherings for those in the US.

While this looks like a cake, there’s nary a bag of flour, white sugar, or eggs in site. Instead, the bulk of the dessert is made up of a watermelon cut into a star. Topped with fluffy whipped cream and blueberries and strawberries, it’s best served cold and in large quantities: you and your guests won’t be able to turn down an extra serving. Enjoy!
