This recipe uses the french toast method of dipping the bread (or here, the tortilla) in an egg bath before cooking. What you end up with is something easy to make and even easier to eat! Top it off with a few sliced peppers and other veggies, and you have a complete breakfast in one dish! To round it out, serve this with a bowl of freshly cut up fruit, and start your day off right!
