Sandwiches are loved by just about anyone, including some of the pickiest children. Salads, on the other hand … not so much. So how can you encourage your little one to eat something new from the produce aisle? Like, say, red cabbage for example?
Make this sandwich. The base (cut into an oval) can be any flavor you (or they) like. Then, shred some red cabbage and toss it with a honey and vinegar dressing (apple cider, honey, and olive oil is a good combo) and use the red cabbage to give the sandwich a crazy mop of hair! Create a face, a cheese bow, and sit back and enjoy watching your kid scarf down a healthy vegetable. Enjoy!
