- Hard boiled eggs, peeled
- plum tomatoes
- Fresh Parmesan cheese
- Fresh chives
This is a fun and healthy tray to put out at a gathering.
1. Cut the bottom of the hard boiled egg off – so it can stand on it’s own
2.Cut tomatoes in half and scoop out the seeds, you will be left with the firm part of the tomato. Use extra care when doing this, you wont want to rip or tear the tomato.
3. Place one tomato half on each egg – kind of like a hat, this will transform your egg into a mushroom.
4. Arrange your mushrooms onto a bed of fresh chives. The chives will look like a field of grass.
5. Sprinkle fresh Parmesan cheese on top of your mushrooms.
