You don’t need bread to hold an egg salad sandwich, and this is a perfect example of how!

Directions:

  1. Hard boil one dozen eggs. Let them cool, then peel and dice. Dice one red pepper and one yellow pepper. Mix the eggs and peppers with mayo, salt, and pepper to taste and set aside.
  2. Slice several cucumbers in half length wise, reserving the top. Take the tops and slice these into thin strips. Remove the interior of the remaining halves to create boats.
  3. Fill the cucumber boats with egg salad. Thread the slices onto skewers, and add a piece of fruit leather in the shape of a flag to the top. Insert these into the boats.

Serve these with a fruit platter, selection of cheeses, or on their own for a fun, healthy lunch. Enjoy!
