We’re partial to any recipe that utilizes as much of the produce section as possible, which is why we’re incredibly smitten with these adorable chicks. A perfect vegan / vegetarian sandwich option, ideal appetizer or filling snack, they’re also cheap and fast to make. Sounds like a winner, right?
This recipe starts with a base of toast cut into a circle. Spread a thin layer of mayonnaise or cream cheese on top, and then evenly arrange steamed corn kernels over this, pressing them slightly so that they stick to the toast. Cut a strawberry and carrots for the hair and feet, top it off with olives and tomatoes for the face, add a side of cucumber and hot sauce, and you’re all set! It takes less than 10 minutes (if you use the microwave to steam the corn), and will be the star of any table. Enjoy!
