Human beings are attracted to bright colors, and the youngest among us practically flock to them. Which makes the average child’s disdain for anything in the vegetable category befuddling, to say the least!

However, we believe we have found somewhat of a solution: this recipe. It’s simple, uses raw vegetables (which many younger kids prefer strongly over cooked), and doesn’t include a whole lot of lettuce (which tends to cause the biggest issue for many children). Filled with vegetables that most find enjoyable and laid out to showcase the beautiful, vibrant colors of mother nature’s finest, this salad is a breeze to put together and a perfect addition to a healthy lunch or dinner.
