Most people love omelets, but making a bunch of separate ones for a large group simply isn’t feasible. Enter the frittata: flavorful, warming, and incredibly easy to customize, and you can make omelets for a crowd!
This recipe features the classic combination of spinach and sun dried tomatoes. Add in a bit of high-quality parmigiano reggiano (not the green can, please), and you’re in for a real treat. These directions call for cooking the entire thing in a pan; however, for many it’ll be easier to cook the frittata in the skillet until the bottom is completely set, and then finish it off in a 350 degree oven cooked through. Pair this with fresh fruit and coffee for breakfast, or a quality bread at dinner time, and you have a complete meal. Enjoy!
